Erythritol is a polyol (sugar alcohol) that occurs naturally in small amounts in fruits (e.g. melon, watermelon, pear, grapes) and in fermented foods (e.g. soy sauce).
In industrial production, it is usually obtained through the fermentation of glucose, fructose, xylose, sucrose, cellulose, and glycerol by yeasts and yeast-like fungi. After consumption, erythritol is largely absorbed in the small intestine and excreted unchanged in the urine. As a result, it provides very little energy (practically 0 kcal/g) and has a minimal effect on blood glucose and insulin levels, unlike traditional sugar, which undergoes metabolic conversion and affects blood glucose levels.
