Xylitol is a chemical compound from the polyol (sugar alcohol) group, naturally occurring in small amounts in certain fruits, vegetables, and plant fibers such as birch or corn. Industrially, it is typically obtained through biotechnological processes using hemicellulose or plant-derived xylose.
Its taste and sweetness level are very similar to conventional sugar (sucrose), while providing approximately 40% fewer calories.
Unlike glucose or sucrose, xylitol is only partially absorbed in the small intestine and then metabolized in the liver. This process does not require insulin as the primary hormone responsible for glucose transport, which distinguishes it from classical carbohydrates.
Applications:
Xylitol is widely used as a sugar substitute in food products, beverages, and functional foods. It is also utilized in the pharmaceutical and cosmetic industries, including oral-care products, chewing gums, and toothpastes.
From a technological standpoint, it is characterized by good solubility, a pleasant cooling effect, and thermal stability, making it suitable for baking and cooking without loss of flavor quality.
Safety:
At higher intakes (typically >20 g/day), xylitol may cause temporary gastrointestinal discomfort such as bloating or a laxative effect-common to most polyols.
